Why I Love Coconut

Why I Love Coconut

Ever since I went dairy-free, coconut has become my main go-to. Whether it’s substituting butter, or milk, adding a creamy element to a smoothie, or creating a delicious cream/frosting, coconut has been a lifesaver.

But coconut doesn’t just work well for substitutions in the kitchen. It also comes with a host of benefits that would make me want to use it in everything even if I wasn’t allergic to dairy!

Favorite Products

Two of my favorite coconut products are coconut oil and canned coconut milk. I use coconut oil every single day for simply roasting or sautéing veggies, baking treats, or slathering it on my body. I keep a jar in the kitchen and a jar in my bathroom! It’s just so versatile! Recently, canned coconut milk has become one of my favorites. It provides a great source of medium-chain fatty acids that don’t have to be processed by the digestive tract before being absorbed. That way, it’s less work for the gut and more nutrients for the body!

Nutrient-Dense

Plus, since many people who suffer from digestive issues also struggle to keep weight on and get an adequate amount of calories, high-fat coconut products provide a great source of healthy, nutrient-dense calories for the body. Since I always struggle to gain weight, I love using canned coconut milk to make smoothies and milkshakes. It contains all the good calories, fats, and nutrients that are just sucked right into my cells, providing an easy, quick way for me to get nutrition. That way, my body receives all the energy it needs to function.
