Flourless Plantain Waffles

Okay, I don’t usually create posts for other people’s recipes because I like to create my own, but I was literally so excited when I tried these OUTSTANDING waffles from easygfrecipes.com. Here’s the link for the original recipe, but I also posted it below.

The Excitement

I am seriously GIDDY to be sharing it with you today. Finally, I found a recipe for VEGAN, yes VEGAN, waffles that don’t turn into a disaster and fall apart! Best part? They’re actually fluffy! There’s not even flour or added sugar either!

Plantains

I know plantains can sometimes be hard to find, but Whole Foods has been keeping them in stock pretty regularly lately, and whenever I see them, I can’t help but pick up a few. My eyes usually end up being bigger than my stomach, so I always have to find some creative way to use them before they go bad.

The good thing is that they’re so versatile and have definitely been a life saver for any kind of egg-free baking recipe that I’ve tried. I just made nut-free, egg-free plantain English muffins that turned out just as amazing as these waffles (I’ll share the recipe for those soon). Plantains also never fail fried up in some coconut oil, maybe even some garlic and onions, too. See what I mean? They’re just so versatile! I could talk about plantains all day long, no doubt, but I’ll stop there for today so you have time to whip up some of these amazing waffles! Enjoy!

The Recipe

Flourless Plantain Waffles

Flourless? Paleo? Vegan? Waffles made from plantains? Does it even get better than that?!

Ingredients
  • 1 large ripe plantain, roughly chopped
  • 1 medium green plantain, roughly chopped
  • 2 & ½ tablespoons coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon cinnamon (I've made these waffles with and without cinnamon and both ways are delicious!)
  • ½ teaspoon baking soda
  • ½ teaspoon sea salt
Instructions
  1. First, preheat your waffle maker.
  2. Next, blend the plantains in high-speed blender until you have a nice purée.
  3. Then, with the blender on low, add in the melted coconut oil and continue to blend until combined. Next, add the vanilla extract, apple cider vinegar, and cinnamon and blend again until combined.
  4. Lastly, add in the baking soda and sea salt and blend once more until combined.
  5. Next, spray your preheated waffle maker with cooking spray. Then, pour/scoop the batter onto the hot surface, cooking according to the directions for your waffle maker (amount of batter and cooking time will vary depending on what kind of waffle maker you have).
  6. Repeat with the remaining batter, making sure to spray your waffle maker before cooking each waffle.
  7. Serve the waffles warm and top with your favorite toppings. As you can see from my pictures, you can get pretty creative with the toppings 😉
