Blue Moon Banana Nice Cream

Blue Moon Banana Nice Cream

Okay, so this might sound weird, but if there’s any flavor of ice cream that reminds me of fall (besides pumpkin spice), it’s blue moon. You’re probably thinking, how in the world does blue moon remind me of fall, right? Well, my mom used to always take my sister and I to the pumpkin farm when we were little, and whenever we would pass the dairy area, I would always beg her for blue moon ice cream.

Finding a Replacement for One of My Favorite Fall Treats

So in addition to the caramel apples, apple cider, and pumpkin spice everything, one of my favorite fall treats has always been blue moon ice cream. But after going dairy-free, I haven’t been able to have my it because out of all the flavors of dairy-free ice cream they make, no one has ever come up with a dairy-free blue moon. So that’s where the idea behind this recipe came from.

Compromising

While this ice cream doesn’t exactly taste like blue moon, it does bring me back to the good old days when getting having it was such a special treat, only available at local farms. BUT, even though this ice cream doesn’t taste like blue moon, it’s definitely a whole lot healthier! The E3 Live Blue Majik powder (a form of blue algae) is what gives the ice cream the blue moon color. It haws been shown to help with inflammation and joint pain and is a great source of antioxidants, so I thought I’d give it a try!

 

The Recipe

Blue Moon Banana Nice Cream

Just as pretty as regular blue moon ice cream, but a whole lot healthier and still delicious!

Recipe type: Dessert
Ingredients
  • 2 large bananas, frozen and roughly chopped
  • 1 tablespoon pure maple syrup (can adjust based on how sweet you want it)
  • 1 tablespoon pure vanilla flavoring (non-alcoholic)
  • 1 teaspoon E3 Live Blue Majik powder
  • The seeds of ½ of a vanilla bean pod
Instructions
  1. Place all of the ingredients in a food processor and process until smooth and creamy.
  2. Serve right away for if you want the texture to be more like soft serve ice cream or place it in the freezer until it's firm.
  3. Top with your favorite toppings or eat it plain!
  4. Enjoy!
Notes
Store leftovers in the freezer in an airtight container.
